When family fire traditions become unsafe due to aging

My dad has always been the one who lights the fireplace, tends the fire on camping trips, manages the grill - it's been his thing for as long as I can remember. But his hands shake now and he's had a couple of close calls, and when I try to help or suggest maybe I should take over, he gets defensive and says he's fine. We're both pretending nothing has changed but we're both scared.
