How do I build real plans for more than one possible future?

Thinking about scenarios and actually planning for them are two different things, and the second is genuinely hard. It is easy to imagine that things could go several ways. It is much harder to hold more than one future in your hands at once and prepare for each. If it feels difficult, that is because it is. The trick is to stop trying to plan every future in full. You do not need a complete plan for each branch. You need to find what the futures share and prepare that first, then note the few forks where your action would truly differ. Most of your preparation serves every scenario. Only a handful of decisions actually depend on which way things break. Start small. Pick one important uncertainty and sketch just two versions, a better one and a worse one. For each, write down the single first move you would make. That is enough to begin. Real scenario planning is not predicting the future. It is making sure that whichever one arrives, you already know your first step.
