How do I handle people saying early childhood work isn't real teaching?

You do some of the most important work there is, shaping children in the years that matter most, and you are paid almost nothing and told it "isn't real teaching." That last part stings even more than the wages, because it dismisses the very thing you pour yourself into. Let yourself be angry about it. The judgment is simply wrong. The truth does not depend on what those people think. The first years of a child's life build the foundation everything else stands on. You are teaching them to trust, to speak, to feel safe, to be curious. That is not lesser work. It may be the most real teaching of all. The people who say otherwise have never done it and do not understand what they are looking at. Hold your own sense of worth apart from their words. Find the colleagues and families who truly see what you do, and let their respect drown out the dismissal. You will not change every mind, and you do not need to. Know the value of your work in your bones, and let that be the ground you stand on.
