My weekends are all catch-up work and I never really rest
The work you could not finish spills into Saturday, then Sunday, until the two weeks blur into one long stretch with no seam between them. You are working seven days and calling two of them rest. Your body knows the difference even when your calendar pretends otherwise. A break that is really overflow is not a break at all. And a week that needs a whole weekend to absorb it is a week that is too full. The catch-up is a symptom, not a personal failing. The real question is why five days of work no longer fit in five days. This weekend, protect one full day. Not both, if that feels impossible, but one. Guard it like an appointment you cannot move. The unfinished work will still be waiting Monday, and you will meet it with something left in you. A person who never truly stops slowly stops working well.
