I have the skills — so why do these conditions still wear me down?

You did the work. You learned the craft. And still the days grind you down — long hours, demands that never let up, people who need more than you have to give. This confuses you. You expected skill to buy you ease. It did not. Here is the honest reframe: skill and endurance are two different disciplines. One is what you know. The other is how you carry what you know, day after day, under load. You have trained the first. You have not yet trained the second. This is not a flaw in you. It is simply the next thing to master.
