Keeping the kitchen clean and safe is second nature to me now; I catch a problem before it becomes one without even thinking. But I also carry a quiet weight nobody else in the building seems to feel, knowing that if I slip once, someone could get sick or worse. Every plate that leaves my line has my whole conscience riding on it.
