When you run the kitchen to the penny but miss the cooking

I can run this kitchen's numbers down to the last penny, tracking every portion and every scrap. But I became a cook because I loved food, and now I spend more time with spreadsheets than with a knife in my hand. Somewhere along the way the cooking turned into accounting, and I miss it.
