My business partner grew up in our home country before emigrating and I was born here in the diaspora, and we're constantly at odds about how to represent our culture in our restaurant because what feels authentic to him feels outdated to me and what feels evolved to me feels like assimilation to him. We started this business to celebrate our heritage but we can't agree on what that heritage actually is or how much it should change.
